DA MARIO -専門料理・レストラン研修風景-
DA MARIO, there is not Florentin who doesn’t know Da Mario. There is no Guidebook not mentioned about Da Mario.
On the glass door and wall of Da Mario is full of Awards, Recommendations ,Interviews on newspapers, Magazines, etc.
This restaurant has been running by a family for generations. They are treated with honor that once they have another baby boy born, it’s been a big news on the local newspaper.
Regardless the big fame, the restaurant is a small one with a humble decoration. I love the wooden cupboard that they use for storing the Tuscan breads. It’s really vintaged.
The restaurant opens at 1200 pm. However, before 12, you can already see a long line of people waiting in the queue. At the Mario, you sit together with other guests. There is no wifi, no coffee offered. The No non-sense business rules applied here.
The men of Da Mario get up early and start preparing their delicious meal. They are very kind to show us how to cook all their signature dishes. Recipes were shared without any obligation. How cool they are. My classmates even got to help them cooked. Yuki cut the T-bone steaks and Takako made the ragu sauce!
The famous dishes are of course the Florentin steak , Pappadelle con chingliale , Pepposo, Trippa and etc. All the Florentin dishes are made with love here.
Da Mario people have a great connection with the Mercator Centrale vendors. They joke and talk like good friends. Obviously, because they have been buying and selling goods for generations.
Anyway, you need to get great ingredients to create great meals.
Today we had a chance to try Pepposo , Ribolita Soup, Florentin steak, Vin Santo and Cantucci.
They were served with a big slice of Tuscan bread. You can ask for a half portion also. This way you can try many famous dishes if you are a tourist.
Da Mario is near to Mercato Centrale. Just walk behind the market to Via Rosina you will find it right there on the corner. If you visit Florence, this little local restaurant is a place to try original Florentin food.
Mind you, do not wear Juventus t-shirt here.
Once you enter the restaurant, you will understand what I mean.
Buon appetito!
